AIVALI'S ESTATE - AIVALIS SOTIRIOS

The AIVALI Winery started in 1997. In its own private vineyards of 35 acres, the cultivars of Agiorgitiko, Syrah, Cabernet Sauvignon and Merlot are cultivated.

The unique goal of the vineyard is the production of high quality products. For this reason, in addition to significant investments, low returns are also selected. The estate is inspired by the philosophy of non - intensified agriculture with almost zero fertilization so the root system is deeply looking for food and moisture in the ground. Vinification is done without any industrial complexion. Wines do not stabilize and are not filtered, thus keeping their authenticity and unique their character acquired from the terroir they grow.
